Holiday Eating Hints To Help You During Treatment

Listed below are eating hints to help you manage side effects from chemotherapy &/or radiation therapy during the holidays. These recipes and menu/snack ideas will help you enjoy your favorite holiday foods during treatment.

Sore Mouth or Throat

Pumpkin Soup

1 cup large onions, sliced
1/4 cup butter
1/2 teaspoon curry powder
2 cups canned pumpkin
1 1/2 teaspoons salt
2 cups heavy cream
2 1/2 cups chicken stock

Melt butter in skillet, add the onion & sauté until soft. Sprinkle with curry powder & sauté an additional few minutes. Add curried onions, pumpkin & salt to food processor or blender. Process until well mixed, then pour in heavy cream, while continuing to process. Transfer pumpkin puree to a large saucepan & heat slowly with chicken stock. Serve warm. Makes 4 servings. WEIGHT GAIN

Consider these new items to lighten and enhance holiday desserts:

*Borden Eagle Brand Fat Free sweetened condensed milk can be substituted in equal parts for regular sweetened condensed milk in holiday baking recipes.
*Nonfat & lowfat cookies including Healthy Choice, Snackwells, & Pepperidge Farm brands.
*Fat free dessert-style yogurts (e.g. coconut cream pie) to garnish fruit or pies & other healthy holiday desserts.
*Keebler's Reduced Fat Ready Pie Crust can be substituted for regular graham cracker crust.
*Reddi-wip whipped cream is now available in a "fat free" variety to use as a topping for low fat holiday desserts.

Diarrhea

*For Mashed Potatoes use either soy milk, Lactaid 100 milk or low fat chicken broth instead of milk.
*Use fat free gravy (canned) to top skinless turkey breast.
*Use 99% Lactose Free Reddi-wip to top gelatin, sliced bananas, or angle food cake.
*Use Eggnog flavored Ensure Plus between meals if weight loss is a problem.
*Serve white rolls instead of whole wheat rolls at dinner.

Nausea

(Small frequent snacks)
*Drink cranberry juice or ginger ale using a straw between meals. (Dilute drinks, if necessary, for better tolerance).
*Eat cooked turkey breast cold or at room temperature on bread to make a sandwich (odors from hot foods can induce nausea & vomiting).
*Have 99% Fat Free Chicken Broth & saltine crackers as a snack.
*Try Sugar Cookies & 1% low-fat milk for dessert
*Use Reddi-wip Fat Free whipped topping for gelatin or angel food cake
